Saturday: Went bowling w/ friends and had dinner LATE at a diner..hubby and I split a burger
Sunday: Used leftover pot roast and shredded it, added some black beans, corn, Rotel and brown rice and made burritos
Monday: Penne pasta w/ red pepper alfredo sauce
Tuesday: Pineapple pork chops, brown rice, green beans & biscuits
Wednesday: Chicken enchiladas using Philadelphia Santa Fe cooking creme
Thursday: Turkey tetrazzini from the freezer
Friday: Will be with family, so not sure what the plan is...
