Sugar Cookies

So I decided I'm going to try and attempt new recipes more often than I have in the past. I'm a pretty picky eater, so it makes it hard to find recipes I like....but I have a HUGE sweet tooth, so I figured I'd start with a simple cookie recipe. I used the recipe for drop sugar cookies found HERE.

They turned out really well, even though I screwed up the recipe slightly because I was too busy trying to do multiple things at once. So here's the recipe! Tonight I'm going to try a chicken florentine recipe...cut in half...let's hope it's edible!

Drop Sugar Cookies

Ingredients:
  • 1 1/3 cups flour
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter or margarine (1 stick), softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • icing (optional)
Directions

Preheat oven to 350 degrees.

In small bowl combine all the dry ingredients.

In the mixer beat butter and sugar until light and fluffy. (I completely forgot to pay attention and had already added the sugar into the dry ingredients, as seen above. Although the cookies still turned out fine, DON'T do what I did!)

Beat in egg and vanilla until blended.

Reduce speed to low and beat in flour mixture just until combined, scraping the bowl with a spatula.

Drop dough by heaping teaspoons, 2 inches apart on an ungreased cookie sheet.

Bake for 10 minutes or until just brown around the edges.

Cool, ice (if you want to) and serve!

Makes about 20 cookies depending on the size.
